What do you need to make Sweet Rosemary Pears and Onions?

Here’s what you’ll need from the grocery store:

  • Pears – 3 large pears * ripe, firm, any in-season pears
  • Red onions – 2 medium red onions * red onions give the dish a beautiful color
  • Rosemary – 6 sprigs of fresh rosemary
  • Olive oil – 2 tablespoons extra virgin olive oil
  • Pure maple syrup – 2 tablespoons pure maple syrup
  • Apple cider vinegar – 1 tablespoon apple cider vinegar
  • Thyme – 1 teaspoon fresh thyme * or substitute dried thyme
  • Kosher salt – 2 teaspoons kosher salt
  • Black pepper – 1½ teaspoons black pepper * or more to taste (we like to use lots of black pepper!)

How do you make Sweet Rosemary Pears and Onions?

  1. Preheat your oven to 350° F and then begin to prep your ingredients.
  2. Prepare a 9×13 inch (or slightly smaller) baking dish by lightly spraying a layer of non-stick cooking spray.
  3. Quarter cut the pears lengthwise. Use a spoon to scoop out the seeds. Then peel and cut the onion into large wedges. Transfer the pears, onions, and rosemary to the prepared baking dish.
  4. Drizzle the olive oil, maple syrup, and apple cider vinegar over the top of the pears and onions. Toss carefully with two forks to coat each pear and onion wedge. Sprinkle the top with the fresh or dried thyme and then season well with salt and pepper.
  5. Bake for 40 minutes. The fruit and veggies should be soft and the liquid slightly caramelized.
  6. Garnish with additional fresh rosemary prior to serving.
