Chicken and Pork Crostina Pasta has a seasoned potato crust served over pasta and topped with a creamy red sauce with a very subtle hint of spice! It is so delicious!

Inspired by an old Olive Garden favorite …

Decades ago, we ordered Chicken Crostina from Olive Garden and our taste buds were smitten. So imagine our excitement when during our next visit all those years ago they were giving away recipe cards and one of them was for the dish that blew us away!

Corey has changed it up slightly over the years to fit our specific fondness for spice and homegrown herbs. He even adjusted it to work with pork chops as well.

What do you need to make Chicken and Pork Crostina Pasta?

This recipe is broken down into 3 parts. I recommend assembling all of your ingredients and needed pots and utensils so you can time everything to be hot and ready to eat around the same time.

Part 1: Chicken & Pork

  • Chicken breasts – 4 chicken breasts
  • Pork chops – 4 pork chops
  • Flour – 2 cups + 1 tablespoon flour
  • Salt – 1 tablespoon salt
  • Pepper – 1 tablespoon black pepper
  • Italian seasoning – 1 tablespoon Italian seasoning
  • Olive oil

Part 2: Garlic Cream Sauce

  • Garlic – 2 tablespoons garlic – minced
  • Beef broth – 1 cup beef broth
  • Tomatoes – 1 can unsalted tomatoes -diced
  • Heavy cream – 1 1/2 cups heavy cream
  • Red pepper flakes – 1 teaspoon red pepper flakes
  • Olive oil – 2 tablespoons olive oil
  • Parmesan cheese – 1 cup parmesan cheese
  • Spaghetti or Linguine – 1 pound spaghetti or linguine – cooked per package instructions
  • Parsley – 3 tablespoons parsley

Part 3: Potato Crust

  • Panko breadcrumbs – 1 1/2 cups Panko breadcrumbs
  • Salt – 1 tablespoon salt
  • Pepper – 1 tablespoon pepper
  • Italian seasoning – 1 tablespoon Italian seasoning
  • Butter – 1/4 cup butter – melted
  • Garlic powder – 1/2 teaspoon garlic powder
  • Parsley – 1/4 cup parsley
  • Potato – 1 small, peeled and grated potato
  • Parmesan cheese – 1/4 cup parmesan cheese

How to make Chicken and Pork Crostina Pasta?

First, season the raw chicken breasts and pork chops with salt and pepper. You can do this up to 30 minutes to several hours prior to cooking this recipe.

Create the potato crust by mixing all of the ingredients together. Then set to the side for later use.

Use only 1 1/2 cups of the flour and mix it with the salt, pepper, and Italian seasoning in a large mixing bowl or an aluminum pan.

Dredge the chicken breasts and pork chops into the mixture, ensuring there is a good coating surrounding each piece of meat, and then transfer to a separate plate.

Heat the olive oil in a large skillet and cook the chicken breasts and pork chops, 2-3 pieces at a time, over medium-high heat until the internal temp reaches 165° F and the outer crust is golden brown in color.

Repeat the process with the remaining chicken and pork. Add more olive oil as needed.

Once it’s been cooked adequately, place the chicken and pork on a large baking sheet and top with the potato crust mixture.

Start cooking the pasta according to the package instructions and once it’s done, you will drain the water from the pot and then set it aside.

In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add in the garlic, and cook for about 1 minute. Mix in 1 tablespoon of flour and beef broth and bring to a boil. Stir in the heavy cream, parmesan cheese, 1 tablespoon parsley, red pepper flakes, and tomatoes. Cook until it’s boiling and the sauce has thickened.

Preheat your oven to the broiler option and broil the chicken and pork chops for about 1 to 2 minutes until the top has turned golden brown.

Add the cooked pasta to each plate, then add chicken or pork, cover with sauce, and top with a sprinkle of parsley.

What can I serve with Chicken and Pork Crostina Pasta?

How should I store and reheat any leftovers?

Store any leftovers in a tightly sealed storage container or plastic bag. Reheat the leftovers in the microwave using a microwave-safe container or if you use a plate, cover it with another plate to help ensure the food does not dry out while cooking. Cook in 1 to 2-minute increments until the food reaches your desired temperature. Eat all refrigerated leftovers within 2 days.

Ingredients

  • 1 can diced tomatoes , unsalted
  • cups heavy cream
  • 2 tbsp olive oil
  • 1 cup parmesan cheese , grated
  • 1 lb spaghetti or linguine , cooked per instructions
  • 3 tbsp parsley

Potato Crust

  • cups Panko breadcrumbs
  • 1 tbsp kosher salt ,
  • 1 tbsp black pepper
  • 1 tbsp Italian seasoning
  • ¼ cup butter , melted
  • ½ tsp garlic powder
  • ¼ cup parsley
  • 1 small potato , peeled and grated
  • ¼ cup parmesan cheese

Instructions
 

Potato Crust

  • Mix all the ingredients together and set aside.

Pasta

  • Cook pasta according to package instructions. Drain and set aside.

Chicken
