  • Unsalted butter, 4 tablespoons unsalted butter – divided in half
  • Pine nuts, ½ cup
  • Shallots, ½ cup shallots – finely chopped
  • Couscous, 1½ cups couscous
  • Bay leaf, 1 bay leaf – fresh or dried
  • Chicken stock, 1¾ cups chicken stock (or chicken broth can be substituted)
  • Kosher salt, ½ teaspoon kosher salt
  • Black pepper, ½ teaspoon black pepper
  • Parsley, ¼ cup parsley – dried or freshly chopped
  • Lemon zest, ½ teaspoon lemon zest

How do you make Couscous with Buttered Pine Nuts and Shallots?

  1. In a large skillet, melt 2 tablespoons of butter over medium heat. Add pine nuts and saute until golden brown. Remove the pine nuts from the pan and set them aside.
  2. Using the same skillet, saute the shallots in the remaining 2 tablespoons of butter over medium heat. Continue to stir and cook until the shallots have softened. Stir in the uncooked couscous; stirring until brown.
  3. Pour in chicken broth, stir in salt and pepper, and bring the liquid to a boil.
  4. Reduce heat to a simmer, cover, and simmer until the broth has absorbed into the couscous; about 10 to 12 minutes.
  5. Remove from the heat and stir in the parsley, lemon zest, and pine nuts. Add additional salt and pepper if needed.
  6. Serve as a flavorful bed for chicken, beef, pork, or fish.
