Chicken and Pork Crostina Pasta has a seasoned potato crust served over pasta and topped with a creamy red sauce with a very subtle hint of spice! It is so delicious!
Cook pasta according to package instructions. Drain and set aside.
Chicken
Preheat the oven to broil.
Use only 1½ cups of the flour and mix it with the salt, pepper, and Italian seasoning in a mixing bowl.
Dredge the chicken and pork into the mixture and set on a plate.
Heat olive oil in a large skillet and cook the chicken and pork chops, 2-3 pieces at a time, over medium-high heat until the internal temp reaches 165° F and the outer crust is golden brown in color.
Repeat the process with the remaining chicken and pork. Add more olive oil as needed.
Place chicken and pork on a large baking sheet and top with potato crust mixture. Broil for about 1-2 minutes until the top has turned golden brown.
Garlic Cream Sauce
In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add in the garlic, and cook for about 1 minute. Mix in 1 tablespoon of flour and beef broth and bring to a boil.
Stir in the heavy cream, parmesan cheese, 1 tablespoon parsley, and tomatoes. Cook until boiling and the sauce has thickened.
To Serve ...
Add spaghetti to each plate, then add chicken or pork, cover with sauce, and top with a sprinkle of parsley.
