Three Cheese Beef Tortellini with Pan-Roasted Tomatoes

Three Cheese Beef Tortellini with Pan-Roasted Tomatoes is a savory and flavorful dish! It’s an easy recipe with a delicious, robust meat sauce combined with fresh garlic, tomatoes, herbs, and baby bella mushrooms … it’s the perfect way to use up a bunch of garden tomatoes and herbs! Here in Texas, most of our herbs are still growing during this warm winter we’re having. We’ve even had a few of our cherry tomatoes and peppers survive the neighborhood wildlife and the slightly cooler temps … which has definitely been good for us! Either way, this super easy pasta recipe is always a hit with our family!

What do you need to make Three Cheese Beef Tortellini with Pan-Roasted Tomatoes?

Here is what you’ll need from the grocery store:

Tortellini

  • Three cheese tortellini, 12 ounce package of three cheese tortellini – (we like the Kirkland Signature Five Cheese Tortelloni brand from Costco)

Beef

  • Ground beef, 1 pound ground beef (or substitute ground turkey)
  • Black pepper, 1 teaspoon pepper
  • Kosher salt, 1 teaspoon salt
  • Tuscany Italian spice blend, 1 tablespoon Tuscany Italian spice blend (or just Italian seasoning)

Tomato Sauce Mixture

  • Unsalted butter, 4 tablespoons unsalted butter
  • Olive oil, 2 tablespoons extra virgin olive oil
  • White onion, 1 large white onion – diced
  • Medley of cherry tomatoes, 1 – 10 ounce package of cherry tomatoes – halved
  • Baby bella mushrooms, ¾ cup baby bella mushrooms – halved
  • Kosher salt, 1 teaspoon salt
  • Black pepper, 1 teaspoon pepper
  • Tuscany Italian spice blend, 1 teaspoon Tuscany Italian spice blend (or just Italian seasoning)
  • Fresh garlic, 5 cloves fresh garlic – minced
  • Basil, 5 fresh basil leaves – cut into pieces

Topping

  • Mozzarella, 6 to 8 slices of fresh mozzarella
  • Tuscany Italian spice blend, 2 to 3 pinches of Tuscany Italian spice blend (or just Italian spice)
  • Parmesan cheese, 2 tablespoons freshly shaved or grated parmesan cheese – (or more to taste)

Garnish

  • Fresh basil leaves

How do you make Three-Cheese Beef Tortellini with Pan-Roasted Tomatoes?

Cook the three-cheese tortellini according to the package instructions. Then drain the pasta water and set it aside.

Preheat the oven to 400° F.

Use a large skillet to brown the ground beef over medium heat. Season with salt, pepper, and Italian seasoning. Continue to stir and cook until meat is no longer pink. Drain the fat from the meat then transfer the meat to a plate lined with paper towels.

Add olive oil and butter to the same skillet and melt over medium-high heat. Carefully add chopped onions and tomatoes. Once onions have softened, add in the mushrooms and garlic. Sprinkle with salt, pepper, and Italian seasoning.

Reduce the temperature to medium heat and continue to stir as the tomatoes break down; about 10 minutes. When the sauce is well combined, taste test, and add additional seasoning as needed. Stir in the ground beef and combine well. Then remove from heat.

Prepare a casserole dish with non-stick cooking spray. Spoon ¾ of the meat and sauce mixture into the bottom of the dish.

Layer all of the tortellini pasta next and then add the remaining meat and sauce mixture.

Sprinkle with parmesan and place the slices of fresh mozzarella over the top. Then dust with Italian seasoning on top of the mozzarella slices.

The casserole is topped with the remaining sauce and meat mixture, then slices of fresh mozzerella, then shavings of parmesan cheese, and sprinkled with salt, pepper, and Italian seasoning.

Bake in your preheated oven for 12 to 15 minutes or until the cheese has fully melted and has started to lightly brown.

Garnish with fresh basil leaves and serve. Enjoy!
