What does it take to make Hamburger Hashbrown Casserole?

This super easy dinner-time recipe doesn’t call for many ingredients … which makes it a great meal for busy moms … and dads!

Here’s what you’ll need from the grocery store:

  • Ground beef, 1 pound of ground beef
  • Black pepper, 1 tablespoon
  • Kosher salt, 1 tablespoon
  • Ground roasted chili peppers (or red pepper flakes), 3 teaspoons
  • Onion, 1 medium onion – diced
  • Red peppers, 1 medium – diced
  • Frozen cubed hash browns, 16-ounce bag of hash browns (or your store may carry frozen cubed potatoes WITH peppers and onions then you can omit the other diced red pepper and onion)
  • Butter, 4 tablespoons
  • Sour cream, 1 cup
  • Cream of chicken soup, 1 – 10.5-ounce can * you can also substitute cream of mushroom soup
  • Mexican blend cheese, 2 cups – shredded * sharp cheddar cheese is also a great substitute

How to make Hamburger Hashbrown Casserole:

First things first … the hash browns must be fully thawed or there will be too much liquid in the dish and it will take much longer to bake. Either thaw out the hash browns for several hours in the refrigerator prior to starting the recipe OR empty them into a large bowl (microwave-safe) and heat for a few minutes at a time until fully thawed.

Once thawed (or microwaved to thaw) empty the hash browns onto a paper towel and pat to dry and remove excess water. Allow the hashbrowns to dry on the paper towel while browning the ground beef.

Let’s get started on this easy recipe …

Preheat oven to 350° F. Spray a 9×13-inch baking dish with non-stick cooking spray.

Next, brown ground beef in a large skillet over medium-high heat. Add in the diced onions, red peppers, kosher salt, black pepper, and ground roasted chili peppers (or use red pepper flakes). Stir to cook until the beef has browned and the vegetables have softened.

Then, be sure to drain the fat from the skillet and set the beef mixture aside. If you leave a lot of the fat behind, your dish can have an oily consistency. It will still taste delicious but if you wrap it in a tortilla, you find it to be pretty messy and dripping with grease!

Your next step is to add the cooked hamburger meat, hash browns, melted butter, sour cream, cream of chicken soup, and toss in 1 cup of cheese.

Stir together in a large bowl to combine well.

Then turn the mixture into the prepared baking dish.

Oh… this easy meal already looks scrumptious!

Sprinkle with the remaining last cup of cheese on top of the casserole.

Bake the hashbrown hamburger casserole for 40 minutes in the preheated oven, uncovered. Then brown potatoes by increasing the temperature to 375° F and baking for another 10 minutes or until the top of hash browns and cheese is crispy and golden brown.

How to serve this yummy casserole dish:

We prefer to serve this flavorful casserole recipe with tortillas. Simply warm them up for a few seconds in the microwave or over the stop top, drop a few scoops of the casserole inside, and then roll it up.
