Cheesy Hamburger Hash Brown Casserole is a flavorful and cheesy family favorite that's super easy to make! Fresh peppers, onions, and a few pinches of ground-roasted chili peppers give it a slight little kick of spice. It's so delicious that we never have any leftovers!
3tspground roasted chili peppers, * or just red pepper flakes

16 ozfrozen cubed hash browns, * or your store may carry frozen cubed potatoes with peppers and onions

Preheat oven to 350° F. Spray a 9x13-inch baking dish with non-stick cooking spray.
The hash browns must be fully thawed or there will be too much water in the dish and it will take much longer to bake. Either thaw out the hash browns for several hours in the refrigerator prior to starting the recipe OR empty into a medium-sized microwave-safe bowl and heat for a few minutes at a time until fully thawed. Once thawed (or microwaved to thaw) empty the hash browns onto a paper towel and pat to dry and remove excess water.
Brown the ground beef in a large skillet over medium heat. Add onions, red pepper, salt, pepper, and ground roasted chili peppers. Stir to cook until the beef has browned and the vegetables have softened. Drain the fat from the skillet and set the beef mixture aside.
In a large bowl, add the beef mixture, hash browns, melted butter, sour cream, cream of chicken soup, and 1 cup of cheese. Stir to combine well.
Turn the mixture into the prepared baking dish and sprinkle with the remaining 1 cup of cheese.
Bake uncovered for 40 minutes. Then increase the temperature to 375° F and bake for another 10 minutes or until the top is crispy and golden brown.
