Potatoes

  • Baby Yukon Gold potatoes, 1 pound baby Yukon Gold potatoes – cut in half
  • Extra virgin olive oil, 2 tablespoons olive oil
  • Garlic, 2 cloves garlic – minced
  • Kosher salt, 1 teaspoon salt (or more to taste)
  • Black pepper, 1 teaspoon pepper (or more to taste)
  • Taco seasoning, 1 teaspoon taco seasoning (or more to taste)
  • Dried oregano, 1 teaspoon dried oregano
  • Rosemary, 1 sprig fresh rosemary – chopped
  • Thyme, 1 sprig fresh thyme – chopped

Green Beans

  • Fresh green beans, 1 pound fresh green beans – ends trimmed
  • Extra virgin olive oil, 2 tablespoons olive oil
  • Garlic, 2 cloves fresh garlic -minced
  • Shallots, 1-2 large shallots – chopped lengthwise
  • Kosher salt, 1 teaspoon salt
  • Black pepper, 1 teaspoon pepper
  • Almonds, ⅓ cup sliced almonds
  • Shelled sunflower seeds, 2 tablespoons shelled sunflower seeds – salted or unsalted
  • Rosemary, 1 sprig fresh rosemary
  • Thyme, 1 sprig fresh thyme

How do you make this easy sheet pan recipe?

Preheat oven to 400° F.

Prepare a large rimmed baking sheet with a layer of parchment paper.

In a large bowl, mix together all the ingredients for the potatoes. Toss well to coat each potato in the oil and seasonings. Transfer to the prepared baking sheet; spread out evenly.

Bake for 20 minutes.

Using the same bowl from the potatoes, mix together all of the ingredients for the green beans. Toss well to coat each bean in the oil and seasonings.

Once the potatoes have baked for 20 minutes, remove the pan from the oven and mix the green bean mixture in with the potatoes. Place back in the oven and bake for 30 to 35 minutes or until the potatoes are fork-tender. ** We do this just so we don’t over-cook the green beans.
