Roasted Garlic Golden Potatoes & Green Beans are a tasty side dish to any meal or holiday dish filled with spices, fresh herbs, shallots, sliced almonds, and shelled sunflower seeds!
Preheat oven to 400° F.Prepare a large rimmed baking sheet with a layer of parchment paper.
In a large bowl, mix together all the ingredients for the potatoes. Toss well to coat each potato in the oil and seasonings. Transfer to the prepared baking sheet; spread out evenly.
Bake for 20 minutes.
Using the same bowl from the potatoes, mix together all of the ingredients for the green beans. Toss well to coat each bean in the oil and seasonings.
Once the potatoes have baked for 20 minutes, remove the pan from the oven and mix the green bean mixture in with the potatoes. Place back in the oven and bake for 30 to 35 minutes or until the potatoes are fork-tender.
Optional:Garnish with additional fresh herbs prior to serving.
