Preheat the oven to 350° F and then prep the ingredients. Prepare a 9x13 inch (or slightly smaller) baking dish by lightly spraying a layer of non-stick cooking spray.
Quarter cut the pears lengthwise. Use a spoon to scoop out the seeds. Peel and cut the onion into large wedges. Transfer the pears, onions, and rosemary to the prepared baking dish.
Drizzle the olive oil, maple syrup, and apple cider vinegar over the top of the pears and onions. Toss carefully with two forks to coat each pear and onion wedge. Sprinkle the top with the fresh or dried thyme and then season well with salt and pepper.
Bake for 40 minutes. The fruit and veggies should be soft and the liquid slightly caramelized.
Garnish with additional fresh rosemary prior to serving.
