What do you need to make Cinnamon Apple Butter Sweet Potatoes?
Here’s what you’ll need from the grocery store …
- Sweet potatoes, 3½ pounds sweet potatoes
- Unsalted butter, 5 tablespoons unsalted butter – at room temperature
- Apple butter, ¾ cup apple butter
- Cinnamon, 1 teaspoon ground cinnamon
Optional toppings:
- Marshmallows, ½ cup marshmallows
- Crushed pecans or walnuts, ¼ cup crushed pecans or walnuts
- Cinnamon, ¼ tsp ground cinnamon
How do you make this easy holiday sweet potato recipe?
Set your butter out to reach room temperature while you prep your sweet potatoes and ingredients.
Then preheat your oven to 400° F.
Use a fork to pierce holes all over each sweet potato. Place the potatoes on a large baking sheet wrapped in aluminum foil (to protect your pan and to make clean up easier!).
Bake for 1½ hours or until the sweet potatoes are fork-tender, as cooking times may vary per oven. Ensure the potatoes are tender enough to mash.
Remove from your oven and allow to sit until they are cool enough to peel the skins off with your fingers.
Transfer the peeled sweet potatoes to a large microwave-safe bowl and mash them until creamy with a potato masher. Then mash in the apple butter and room temperature butter. Sprinkle in your cinnamon; taste test and add additional cinnamon if you’d like a little extra zing!
Reheat the potatoes in the microwave (in a microwave-safe bowl) or transfer to a saucepan and reheat over medium heat on the stove. * Since microwave cooking times vary – heat for a few minutes, stir and test to see if the temperature is to your liking.
Top with marshmallows, crushed walnuts or pecans, and a sprinkle of cinnamon to garnish and serve immediately. Enjoy!!
