Cinnamon Apple Butter Sweet Potatoes are hands down the BEST sweet potatoes we have ever created! It is a family holiday favorite and super easy to make!
Use a fork to pierce holes all over each sweet potato. Place the potatoes on a large baking sheet wrapped in aluminum foil (to protect your pan).
Bake for 1½ hours or until the sweet potatoes are fork-tender, as cooking times may vary per oven. Ensure the potatoes are tender enough to mash.
Remove from oven and allow to sit until they are cool enough to peel the skins with your fingers.
Transfer the peeled sweet potatoes to a large microwave-safe bowl and mash until creamy with a potato masher. Mash in the apple butter and butter. Sprinkle in cinnamon; taste test and add additional if desired.
Reheat the potatoes in the microwave (in a microwave-safe bowl) or transfer to a saucepan and reheat over medium heat on the stove.* Since microwave cooking times vary - heat for a few minutes, stir and test to see if the temperature is to your liking.
Top with marshmallows, crushed walnuts or pecans, and a sprinkle of cinnamon over the top to garnish and serve immediately.
