Delicious Bacon Cheeseburger Pie Recipe
Bacon Cheeseburger Pie is quite possibly the best burger you’ll ever eat! Seasoned lean ground beef combined with diced dill pickles, tomatoes, topped with crispy strips of bacon and gooey cheese, and served within a flavorful pie crust. Certain to be a hit at dinner for the whole family!

What do you need to make this easy Cheeseburger Pie?
For this easy dinner recipe (very similar to a cheeseburger pot pie recipe), we use just about every ingredient we’d pull for making regular ole cheeseburgers at home plus a few others except I find this dish creates a lot less mess! And I’m all for that.
Bacon Cheeseburger Filling
Here’s what you’ll need but feel free to add all your favorite burger toppings:
- Pie pastry, 1 – 9 inch pastry pie shell * or make it from scratch ... Try Coogan’s Favorite Pie Crust!
- Ground beef, 1 lb lean meat or ground chuck
- Vegetable oil, 1 tablespoon
- Onion, 1 large onion (white or red onion) – diced – 3/4 cup
- Garlic powder, 2 teaspoons * or 3 cloves of garlic, minced
- Steak seasoning, 2 teaspoons
- Ground roasted chili peppers, 2 teaspoons * or 1 teaspoon red pepper flakes
- Salt, 1 teaspoon
- Black pepper, 1 teaspoon pepper
- Panko bread crumbs, plain – 1/2 cup
- Eggs, 2 large
- Mustard, 2 1/2 tablespoons
- Ketchup, 2 1/2 tablespoons * ( plus 1 extra cup ketchup to serve with)
- Worcestershire sauce, 3 tablespoons
- Dill pickles, diced – 1/2 cup
- Cheddar cheese, shredded – 1 1/2 cup * (or use cheese slices)
- Tomatoes, diced – 1/2 cup canned or freshly sliced
- Bacon, cooked crispy – 4 to 6 strips
Pie Pastry Egg Wash
Here’s what you’ll need:
- Egg, 1 large or medium
- Water, 1 tablespoon
- Sesame seeds * Optional
Also known as a Cheeseburger Casserole. Here’s How to make this Delicious Bacon Cheeseburger Pie:
First, heat the oven to 375° F and cook the bacon according to your preferred method. We like extra crispy so we prepare it ahead of time and then add it to the top of the pie during its last few minutes of baking to heat it back up.
Heavily grease a deep 9 or 10-inch cast-iron or oven-safe skillet heavily with butter or cooking spray. Place a thawed 9-inch pie crust into the skillet, allowing the edges to hang off the sides.
Heat the vegetable oil and white or red onions in a large skillet (10-in skillet or larger) over medium-high heat. Add in the ground beef. Cook beef by stirring with a spatula to break up the larger bits of meat.
Stir the beef until it is no longer pink and then completely drain the fat from the pan.
We prefer lean meat over high-fat meat like lean ground beef, ground chuck, or even ground turkey to lessen the amount of fat and grease in the pan and to ensure it doesn’t create a soggy pie crust bottom.
Reduce to medium heat and stir in the garlic, seasonings, and bread crumbs.
Combine well, then remove from the heat to allow the meat mixture to cool.
Using a wire whisk, stir together the eggs, ketchup, Worcestershire sauce, mustard, and dill pickles in a medium bowl.
Combine the egg mixture with the cooled beef mixture.
RECIPE NOTE:
If the meat is still hot, place the mixture to the side and wait for it to cool before mixing so the temperature does not begin to cook the eggs.
Divide the cheddar cheese (or layer with cheese slices) in half and stir in one half of the cheese to the meat and set the other half to the side for the topping.
Spoon mixture onto the pie crust, pressing slightly with the back of a spoon to pack it all together.
Place your tomato slices in a single layer on paper towels and pat very gently to reduce some of the water prior to adding them to the top of the cheeseburger pie. Then layer tomato slices (or diced tomatoes) and sprinkle or layer with more cheddar cheese. Add the crispy cooked bacon slices or crumble bacon over the top of the cheese. Honestly, you can layer these pot pies any way you prefer … and add all your favorite burger toppings!
Trim the excess pie crust hanging over the sides and crimp what’s remaining.
Prepare the egg wash by whisking together one egg and one tablespoon of water in a small bowl. Brush the visible crust with the egg wash. Then sprinkle this top crust with sesame seeds just like the top of a yummy hamburger bun.
Bake for 40 minutes until the exposed crust is golden brown. Top with the cooked slices of bacon and remaining cheddar cheese. Bake for 5 to 10 minutes to ensure the top cheese has thoroughly melted.
Allow the cheeseburger pie to cool for 5 to 10 minutes to fully set.

How long can I store Bacon Cheeseburger Pie?
Store leftovers in a sealed container for up to three days. Reheat the cold pie by cooking in the microwave for a few minutes at a time until it is heated and cheese melted to your preference.

Ingredients

- 1 tbsp vegetable oil
- ¾ cup onions , diced
- 2 tsp garlic powder , or 3 minced cloves of garlic
- 2 tsp steak seasoning
- 2 tsp ground roasted chili peppers , or 1 tsp red pepper flakes
- 1 tsp salt
- 1 tsp pepper
- ½ cup Panko breadcrumbs , plain
- 2 large eggs
- 2½ tbsp mustard
- 2½ tbsp ketchup
- 3 tbsp Worcestershire sauce
- ½ cup diced dill pickles
- 1½ cup cheddar cheese , shredded
- ½ cup can of diced tomoates , or freshly sliced tomatoes
- 4-6 strips bacon , cooked crispy
Egg Wash for Pie Crust
- 1 medium egg
- 1 tbsp water
Instructions

- Reduce the heat to medium-low and stir in the garlic, seasonings, and breadcrumbs. Combine well and then remove from heat to allow the mixture to cool.
- Whisk together the eggs, ketchup, Worcestershire sauce, mustard, and pickles in a medium mixing bowl. Then combine the egg mixture with the cooled meat mixture. NOTE: if the meat is still hot, wait before mixing so the temperature does not begin to cook the eggs.
- Divide the cheese in half and stir in one half of the cheese to the meat and set the other half to the side.
- Turn the mixture onto the pie crust pressing slightly with the back of a spoon to pack it all together. Top with fresh or diced tomatoes. Trim off the excess pie crust hanging over the sides and then crimp the remaining pastry.
- Prepare the egg wash by whisking together one egg and one tablespoon of water. Brush the visible crust with the egg wash.
- Bake for 40 minutes. Then top with the cooked crispy bacon and remaining cheese. Bake for another 5 to 10 minutes or until the top cheese has thoroughly melted.
- Allow the pie to cool for 5 to 10 minutes to fully set prior to slicing and serving.
