Instructions
Heat oven to 375° F.Grease a deep 9 or 10-inch cast-iron skillet heavily with butter. Place a thawed 9-inch pie crust into the skillet, allowing the edges to hang off the sides.
Heat the vegetable oil in a large skillet over medium heat. Add the chopped onion and cook for about 3 minutes or until softened. Add the ground beef, stirring with a spatula to break up the larger bits of meat, cooking until the beef is no longer pink.Drain the fat from the pan.
Reduce the heat to medium-low and stir in the garlic, seasonings, and breadcrumbs. Combine well and then remove from heat to allow the mixture to cool.
Whisk together the eggs, ketchup, Worcestershire sauce, mustard, and pickles in a medium mixing bowl. Then combine the egg mixture with the cooled meat mixture. NOTE: if the meat is still hot, wait before mixing so the temperature does not begin to cook the eggs.
Divide the cheese in half and stir in one half of the cheese to the meat and set the other half to the side.
Turn the mixture onto the pie crust pressing slightly with the back of a spoon to pack it all together. Top with fresh or diced tomatoes. Trim off the excess pie crust hanging over the sides and then crimp the remaining pastry.
Prepare the egg wash by whisking together one egg and one tablespoon of water. Brush the visible crust with the egg wash.
Bake for 40 minutes. Then top with the cooked crispy bacon and remaining cheese. Bake for another 5 to 10 minutes or until the top cheese has thoroughly melted.
Allow the pie to cool for 5 to 10 minutes to fully set prior to slicing and serving.
