- Onion, medium – chopped
- Red bell pepper, 1/2 medium – chopped
- Heavy cream, 2/3 cup
- Sour cream, 1/2 cup
- Eggs, 6 large
- Kosher salt, 1 teaspoon
- Black pepper, 1/2 teaspoon
- Garlic powder, 1/2 teaspoon
- Onion powder, 1/2 teaspoon
- Cheddar cheese, 2 cups – shredded
- Tater tots, 6 cups – frozen
How do I make Sausage and Tots Breakfast Casserole?
A few of the super great things about this recipe is how EASY it is to make, it tastes AMAZING, and it looks SPECTACULAR when you set it on the table to serve! And one more thing … it tastes delicious reheated as leftovers the next day. Which for me means to make enough that will guarantee leftovers for the next couple of mornings!
Shall we begin?
First, preheat your oven to 375 degrees F. Then brown the spicy sausage in a large skillet over medium-low heat. After it has cooked for about five minutes, add in the chopped onions and red peppers. Cook until the sausage is no longer pink and then set aside.
*{drain some of the fat if you need to.}
Whisk together the heavy cream, sour cream, eggs, salt, pepper, garlic powder, and onion powder in a medium bowl until well combined.
Spray a 9 or 10-inch cast-iron skillet with non-stick cooking spray.
Place an even layer of frozen tater tots on the bottom of the skillet.
Then add the browned sausage mix followed by 1 1/2 cups of shredded cheddar cheese.
Pour the egg mixture over the top of the cheese and allow it to seep through to the bottom layer of tots.
Then layer the remaining tater tots and sprinkle with the last 1/2 cup of shredded cheddar cheese.
I like to be extra and arrange the tots to look pretty but there is no need for that. Just toss them tots on the top and get them in the oven!
Bake for 40 to 45 minutes until the tots are golden brown. Allow to stand for about 5 to 10 minutes before cutting and serving.
