Pumpkin Spice Baked Apples (Easy Dessert)
Pumpkin Spice Baked Apples are stuffed full of fall flavors! Sweet or tart apples, rolled oats, brown sugar, pecans, cranberries, cinnamon, nutmeg, apple cider, and of course … pumpkin spice! A versatile treat that can be eaten straight from the oven or top your baked apples with powdered sugar, whipped cream, gooey caramel, or your favorite ice cream!

What ingredients do you need to make Pumpkin Spice Baked Apples?
Here’s what you need from the grocery store …
For the apples:
- Large apples – 4 large apples (be sure to select apples that sit up well on their own)
- Unsalted butter – 5 tablespoons unsalted butter
- Brown sugar – 3/4 cup packed brown sugar (light or dark)
- Old-fashioned rolled oats – 3/4 cup old-fashioned rolled oats
- Pecans – 1/2 cup chopped pecans
- Dried cranberries – 3 tablespoons dried cranberries
- Pumpkin pie spice – 1 teaspoon pumpkin pie spice (see the recipe below for homemade Pumpkin Pie Spice if you don’t have any in the pantry!)
- Ground cinnamon – 1 teaspoon ground cinnamon
- Ground nutmeg – 1/2 teaspoon ground nutmeg
For the baking pan:
- Apple cider – 3/4 cup apple cider
Optional toppings:
- Powdered sugar
- Ice cream
- Whipped cream
- Caramel (Mmmm …. my favorite!!)
How to make Homemade Pumpkin Pie Spice Recipe:
In a small bowl, combine the following spices together and mix well. Store in a sealed container.
- 2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- 1/4 teaspoon nutmeg
- 1/2 teaspoon cloves
How do you make Pumpkin Spice Baked Apples?
- Preheat your oven to 375° F.
- Wash and dry each apple. Then core the center out with a sharp pairing knife while being careful not to puncture through the bottom of the apple. Remove the core and seeds.
- Gently carve out a wider hole with a spoon and save the bits of inner apple you remove (in case you’d like to add it back into your mix or save it for a salad or other recipe).
- Mix together all of the ingredients (except for the apple cider) in a large bowl.
- Place the apples into a baking dish or pie pan. Use a spoon to add the mixture inside each apple until full.
- Pour the apple cider into the bottom of the baking dish. This will keep the apples from drying out while baking. Use a basting brush and gently brush some of the cider over each apple. Then lightly sprinkle pumpkin spice over the top of each apple.
- Bake for 45 minutes. Remove from the oven and baste with cider and apple juices.
- Sprinkle with the powdered sugar or other favorite toppings and serve.

- ¾ cup packed brown sugar , light or dark

- ½ cup chopped pecans
- 3 tbsp dried cranberries , optional
- 1 tsp pumpkin pie spice
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
For the Baking Pan
- ¾ cup apple cider

- ice cream
- whipped cream
- caramel
