Pumpkin Spice Baked Apples are stuffed full of fall flavors! Tart apples, rolled oats, brown sugar, pecans, cranberries, cinnamon, nutmeg, apple cider, and of course ... pumpkin spice!
4largeapples, select apples that sit well on their own
5tbspunsalted butter, softened to room temperature
¾cuppacked brown sugar, light or dark
¾cupold-fashioned rolled oats
½cupchopped pecans
3tbspdried cranberries, optional
1tsppumpkin pie spice
1tspground cinnamon
½tspground nutmeg
For the Baking Pan
¾cupapple cider
Optional Topping
powdered sugar

whipped cream

Preheat oven to 375° F.
Wash and dry each apple. Then core the center out with a sharp pairing knife while being careful not to puncture through the bottom of the apple. Remove the core and seeds. Gently carve out a wider hole with a spoon and save the bits of inner apple you remove (in case you'd like to add it back into your mix or save it for a salad or other recipe).
Mix together all of the ingredients (except for the apple cider) in a large bowl.
Place the apples into a baking dish or pie pan. Use a spoon to add the mixture inside each apple until full.
Pour the apple cider into the bottom of the baking dish. This will keep the apples from drying out while baking. Use a basting brush and gently brush some of the cider over each apple. Then lightly sprinkle pumpkin spice over the top of each apple.
Bake for 45 minutes.
Remove from oven and baste with cider and apple juices. Sprinkle with powdered sugar or other toppings and serve.
