Irish Cheddar & Potato Biscuit Meat Pies
Buttery, golden hand pies full of Guinness flavored ground beef, Irish cheddar cheese, and seasoned hash browns create this tasty meal. Irish Cheddar & Potato Biscuit Meat Pies are super easy and delicious!
This is a fun and versatile meal to add to your recipe rotation for St. Patrick’s Day weekend festivities! You can add a little cabbage into the meat mixture or just serve some green veggies on the side. You can even add a few tiny drops of green food coloring to your sour cream for a fun spin to dip and dunk these tasty hand pies into.

What do you need to make Irish Cheddar & Potato Biscuit Meat Pies?
- Olive oil, 1 tablespoon extra virgin olive oil
- Onion, ¼ cup minced onion
- Lean ground beef, 2 pounds lean ground beef
- Guinness beer, 6 tablespoons Guinness beer
- Frozen shredded hash browns, 2 cups frozen shredded hash browns – thawed
- Irish cheddar cheese, 2 cups Irish cheddar cheese – shredded
- Salt and pepper
- Pillsbury Grands biscuits, 3 16.3 ounce cans Pillsbury Grands biscuits
- Flour, 3 to 4 tablespoons to roll out the biscuit dough
- Butter, 4 tablespoons butter – melted
- OPTIONAL – 1 cup chopped fresh cabbage
Topping and Garnish
- Dried parsley
- Sour cream

How do you make Irish Cheddar & Potato Biscuit Meat Pies?
- Preheat your oven to 350° F. Line a large baking sheet with parchment paper to save on clean up time.
- Saute the chopped onions in olive oil over medium-high heat, in a large skillet. Cook until the onions have softened, which should be about 2 to 3 minutes.
- Add in the ground beef and pour in the Guinness beer; stir until the meat has browned and is no longer pink. Remove the grease from the cooked meat.
- Mix in the thawed hash browns and shredded Irish cheddar cheese. Combine well. Season to preferred taste with salt and pepper.
- Separate the biscuit dough and roll out each biscuit into a 5-inch flat circle on a floured surface.
- Add a spoonful of the meat and cheese mixture to the middle of each flattened biscuit. Optional: Sprinkle with chopped cabbage. Lift up the sides of the biscuit around the meat, pinching and crimping the dough together to create a seam that encases the meat mixture. The meat pies may open at the top slightly during the baking process.
- Arrange each filled biscuit on the prepared baking sheet. Brush the tops and sides with melted butter and lightly season the tops of each meat pie with salt.
- Bake for about 30 minutes or until the tops are golden brown and the biscuits are thoroughly cooked and not doughy in texture.
- Serve with a dollop of sour cream, if you’d like, and sprinkle parsley on the tops of each meat pie.
