Hearty Lasagna Soup is everything you love about lasagna … but as a soup! It is a comfort food classic with a sweet sauce, scrumptious lasagna noodles, and Italian sausage with the most scrumptious ricotta, parmesan, and mozzarella cheese mixture!
This recipe is our daughter’s absolute favorite and one she asks for all the time which we begrudgingly oblige… HA! We love ANY excuse to make this dish!

I’m not kidding here when I say this, Hearty Lasagna Soup is just that good.
What do you need to make Hearty Lasagna Soup?
The ingredients needed for this tasty soup is almost exactly what you would pick up from the market to make a fresh lasagna.
Here’s everything you’ll need:
- Olive oil, 2 tablespoons
- Onion, medium size – chopped
- Hot Italian sausage, casings removed *OR use turkey sausage OR ground beef plus 2 tbsp Italian seasoning
- Garlic, fresh – 6 cloves – minced
- Tomato paste, 1 6-ounce can
- Diced tomatoes, 1 – 28 ounce can
- Water, 4 cups
- Chicken broth, 2 – 15 ounce cans
- Sugar, 1 tablespoon
- Salt, ¼ teaspoon * to preferred taste
- Pepper, ¼ teaspoon *to preferred taste
- Lasagna noodles, 1 box broken into 1½ inch pieces *(OR substitute for a 16 oz bag of bowtie pasta)
Cheese Mixture
- Ricotta cheese, ¾ cup * (substitute for part-skim ricotta cheese)
- Mozzarella cheese, ½ cup
- Parmesan cheese, 2 tablespoons – grated
Garnish
- Basil, fresh – 2 tablespoons * optional
How do you make Hearty Lasagna Soup?
You will love how easy it is to prepare this recipe!
Let’s get started …
First, heat olive oil in a large soup pot or Dutch oven over medium-high heat. Add the chopped onions and cook until softened. Move the onions to one side of the pot, add the sausage to the other side, and cook until the meat has browned and is no longer pink. Then combine the sausage and onions.
Next, stir in the garlic and tomato paste and cook for about 3 minutes. Then add in the tomatoes, water, chicken broth, sugar, salt, and pepper.
Bring the dish to a boil by cooking over high heat. Reduce the temperature to medium-high heat and add in the broken lasagna noodles, stirring occasionally for about 10 minutes.
While the noodles are cooking, combine the ricotta, mozzarella, and parmesan cheese into a medium mixing bowl…but be sure to stir the soup occasionally. Then set aside and refrigerate the cheese mixture until you are ready to serve the soup.
Reduce temperature to low and allow soup to simmer for about 15 to 20 minutes or until the noodles have fully cooked.
And finally, when you are ready to serve, spoon the soup into large soup bowls, top with the ricotta cheese mixture, and sprinkle with chopped basil over the top.

How to store Hearty Lasagna Soup:
Transfer your leftovers to a glass or plastic storage container and seal with a lid. Reheat in the microwave in a microwave-safe container and I always like to place a plate over the top to trap the moisture inside while cooking. This keeps the food from drying out while reheating.

- 6 cloves garlic , minced
- 1 6-oz can tomato paste
- 1 28 oz can diced tomatoes
- 4 cups water
- 2 15 oz cans chicken broth
- 1 tbsp sugar
- ¼ tsp salt , to preferred taste
- ¼ tsp pepper , to preferred taste
- 1 box lasagna noodles , broken into 1½ inch pieces (OR substitute for a 16 oz bag of bowtie pasta)
Cheese Mixture
- ¾ cup ricotta cheese , (substitute for part-skim ricotta cheese)
- ½ cup mozzarella cheese , shredded
- 2 tbsp Parmesan cheese , grated
Garnish
- 2 tbsp fresh chopped basil , optional
Instructions
- Heat oil in a large soup pot or Dutch oven over medium-high heat. Add onion and cook until softened. Move the onions to one side of the pot and add the sausage to the other side to cook until browned and no longer pink. Mix together with the onions then add the garlic and tomato paste – cook for another 3 minutes. Stir in the tomatoes, water, broth, sugar, salt, and pepper – bring to a boil cooking over high heat. Add broken lasagna noodles, stirring occasionally for about 10 minutes.Reduce temperature to low and allow soup to simmer for about 15 to 20 minutes or until the noodles have fully cooked.
- Cheese Mixture:In a medium bowl, combine the ricotta, mozzarella, and Parmesan cheese and stir well. Set aside and refrigerate until you are ready to serve the soup.
- When serving, add soup to individual bowls and then top each bowl with the ricotta mixture. Sprinkle with chopped basil over the top.
