Sugar & Spice Molasses Cookies …

These old-timey molasses cookies are my absolute favorite cookie out of all the cookie flavors out there! I try my best to only pull this recipe out for special occasions or Christmas because I seriously lose all self-control but I just can’t help myself. It has such a beautiful combination of molasses, cinnamon, ginger, and cloves that even while mixing the ingredients together, this wonderful blend of spices fills your senses and warms your soul … and for me … I want to eat all the dough.

For our family, the scent of Sugar & Spice Molasses Cookies baking in the oven is the scent of winter holidays, of Christmas, and the upcoming New Year. And it always evokes such wonderful memories and emotions … ahhh the power of homemade food and baking in the kitchen!

Anyway … this is such an easy cookie recipe that’s also super versatile. You can undercook them slightly for the ultimate in soft chewy cookies, or overcook them a little for a tasty crispy molasses favorite. You can also decorate with icing, sprinkles, OR … my favorite … whip up our favorite cream cheese frosting and create Molasses Cookie Sandwiches (or Ice Cream Cookie Sandwiches!)! Oh Y U M!!

What do you need to make Sugar & Spice Molasses Cookies?

Here is what you’ll need from the grocery store …

  • Unsalted butter, ¾ cup unsalted butter – melted
  • Sugar, 1 cup sugar
  • All-purpose flour, 2 cups all purpose flour
  • Baking soda, 2 teaspoons baking soda
  • Egg, 1 large egg
  • Molasses, ¼ cup molasses
  • Salt, ½ teaspoon salt
  • Cinnamon, 1 teaspoon ground cinnamon
  • Cloves, ½ teaspoon ground cloves * (or you can substitute for all-spice)
  • Ginger, ½ teaspoon ground ginger
  • Sugar, ½ cup sugar – to roll the cookie dough in

How do you make Sugar & Spice Molasses Cookies?

  1. Mix melted unsalted butter together in a medium bowl with 1 cup sugar and egg until well combined. Then stir in the molasses.
  2. Combine the flour, baking soda, salt, cinnamon, cloves (or all-spice), and ginger in a separate bowl. Mix together well then blend into the molasses mixture.
  3. Cover the cookie dough then chill in the refrigerator for at least an hour.
  4. Preheat your oven to 375° F.
  5. Spread ½ cup white sugar on a plate or bowl. While your oven is preheating, use a spoon full of dough and roll it into a small shaped balls then roll each ball of dough in the plate or bowl of sugar.
  6. Place each cookie dough ball 2 inches apart onto an ungreased baking sheet (or line your baking sheet with parchment paper for easy clean up).
  7. Bake the cookies for 8-10 minutes. When the tops are cracked, they are done EVEN if they don’t look like they’re done. This will ensure your molasses cookies are soft and chewy. Then remove your cookies from the oven and cool on wire racks.
  8. *Optional – Sprinkle sugar on top of the cookies while they cool for a yummy and pretty little touch to each cookie!
  9. Store uneaten and cooled cookies in a sealed bag or container to maintain a soft, chewy texture.
