Texas Roadhouse Dinner Rolls
Heat the milk to at least 180° F either over the stove or in the microwave. Once it reaches the desired temperature, add the 2 tablespoons of softened butter. Allow it to rest and cool to about 120° F.
In a small bowl, add warm water, sugar, and yeast. Stir to combine and dissolve the yeast into the mixture. Allow it to rest for about 10 minutes or until it starts to foam.
Using a stand mixer with a dough hook attachment, combine the yeast, milk, sugar, salt, and 1 cup of flour for about 1 minute. Then beat in the egg.
Add 2 more cups of flour, one cup at a time. Be sure to scrape down the sides with a spatula as you add additional flour. Continue to add flour ½ cup at a time at low speed until the dough forms and pulls away clean from the sides of the mixing bowl. Note: Based on the current humidity in your environment, you may not need all of the flour. Stop adding flour when the dough pulls away clean from the sides.
Then increase the speed of the mixer to medium, kneading the dough with the dough hook for about 4 minutes or until the dough is smooth in texture.
Grease a separate large mixing bowl with non-stick baking spray. Dust a clean counter space with flour (including the palms of your hands) and turn the dough out onto the floured surface.
Form the dough into a ball with your hands and then transfer to the greased mixing bowl. Roll over once in the bowl to coat the entire dough ball with the oil from the spray. Cover the bowl with plastic wrap or a clean damp towel. Set aside in a warm place for about 1 hour or until the dough has doubled in size.
Lightly spray a large baking sheet (or 2 smaller baking sheets) with non-stick baking spray.
Punch down the dough and turn it out onto a floured surface. Dust a rolling pin and your hands with flour as well. Roll the dough out to ½-inch thickness. Cut out squares or rectangles of dough to your desired size with a pizza cutter or a dough scraper.
Shape the rectangles by folding the short edges under, meeting in the middle to make a round shape on the top of the roll.
Transfer each roll to the baking sheets, allowing space between your placement. Cover with plastic wrap and allow to sit and double in size for about 15 minutes.
Preheat the oven to 350° F. Bake for about 12 to 15 minutes or until they turn a deep golden brown. While the rolls are baking, begin to prepare the Cinnamon Honey Butter. Remove from the oven and brush the tops of each roll immediately with melted butter. Serve with Cinnamon Honey Butter.
