Couscous with Buttered Pine Nuts and Shallots - this delicious and chewy pearl-sized pasta, full of flavor, and a yummy crunch of butter-toasted pine nuts. This dish is easy to make and pairs perfectly as a bed for chicken, beef, pork, or fish.
In a large skillet, melt 2 tablespoons of butter over medium heat. Add pine nuts and saute until golden brown. Remove the pine nuts from the pan and set aside.
Using the same skillet, saute the shallots in the remaining 2 tablespoons of butter over medium heat; until softened. Stir in the uncooked couscous; stirring until brown.
Pour in chicken broth, stir in salt and pepper, and bring the liquid to a boil.
Reduce heat to simmer, cover, and simmer until the broth has absorbed into the couscous; about 10 to 12 minutes.
Remove from heat and stir in parsley, lemon zest, and pine nuts. Add additional salt and pepper if needed.
Serve as a flavorful bed for chicken, pork, or fish.
