Spicy sausage is the secret to this Sausage and Tots Breakfast Casserole recipe! It doesn't add heat but it certainly enhances the flavor as it combines with the eggs, cheese, spice blend, and tater tots! A delicious breakfast that's just as tasty when reheated the next day!
Brown the sausage over medium-low heat. After cooking for about 5 minutes, add the chopped onions and red peppers. Cook until the sausage is no longer pink and then set aside. *{drain some of the fat if you need to.}
Whisk together the heavy cream, sour cream, eggs, salt, pepper, garlic powder, and onion powder in a medium bowl until well combined.
Spray a 9 or 10-inch cast-iron skillet with non-stick cooking spray.
Place an even layer of frozen tater tots on the bottom of the skillet. Then add the browned sausage mix followed by 1 1/2 cups of shredded cheddar cheese.
Pour the egg mixture over the top of the cheese and allow it to seep through to the bottom layer of tots. Then layer the remaining tater tots and sprinkle with the last 1/2 cup of shredded cheddar cheese.
Bake for 40 to 45 minutes until the tots are golden brown. Allow to stand for about 5 to 10 minutes before cutting and serving.
