Chicken Fajita Casserole is so incredible to look at and even better to eat! Quite possibly the easiest and most delicious fajitas you will ever make! This is a fabulous, colorful, and festive dish that can be served with or without tortillas.
Chop the chicken into bite-sized pieces. Sprinkle with salt and pepper and toss around to season each piece. Refrigerate while you prepare the rest of the dish.
Fajita Seasoning
Combine all of the fajita seasoning ingredients into a mixing bowl and mix together with a fork or whisk. Set to the side while preparing the vegetables.
Casserole Assembly
Preheat oven to 375° F.
Spray a 9x13-inch baking dish with non-stick cooking spray.
Layer the chicken on the bottom of the baking dish. Drizzle the lime juice and vegetable oil over the chicken and then sprinkle with half of the fajita seasoning. Chop 2 tablespoons of butter into smaller pieces and spread evenly on top of the chicken. Toss the chicken around to coat each piece. *Optional - add a few spoonfuls of black refried beans evenly dropped on top of the chicken.
Next, add the peppers and onions to the top followed by the remaining fajita seasoning and the last two tablespoons of butter (chopped into pieces).
Add a few dollops of sour cream (optional) and then sprinkle with shredded cheese as the final layer.
Cover tightly with foil and bake for 30 minutes. Remove the foil and bake for an additional 10 to 15 minutes to release a lot of the moisture from the vegetables.
